I have been reading about people making quiona for quite some time and finally took a stab at it this Quiona Almond Salad this weekend.
The recipe calls for:
1 cup uncooked quiona
1 cup water
1 teaspoon salt
1/2 cup coarsely shredded carrot | |||||||||||||||||||||||||||||||||||||
1/4 cup sliced almonds | |||||||||||||||||||||||||||||||||||||
1/4 cup dried cherries or cranberries | |||||||||||||||||||||||||||||||||||||
2 tbs of balsamic vinaigrette (you can make your own if you like) | |||||||||||||||||||||||||||||||||||||
Directions: 1. Heat quiona, water and salt to boiling, stirring twice, reduce to low and simmer for 12 to 15 minutes. 2. Remove from heat and let stand for 5 minutes. Fluff quiona with a fork and let cool for another 5 minutes. 3. Mix vinaigrette, quiona and remaining ingredients in a large bowl. **You can serve this either warm or cold depending on preference. I thought it was as delicious as it looked, however Steven was not too fond of it. Quiona is so good for you, so I think this may have been too healthy for him ;) I'll definitely make this for myself again :) Thumbs up to this recipe, ladies!
